Eggplant Casserole - cooking recipe

Ingredients
    2 medium eggplants
    1 can cream of mushroom soup
    1 egg
    1 medium onion
    1 1/2 lb. hamburger
    1 small pkg. Pepperidge Farm stuffing mix (herb or cornbread)
    8 oz. grated Cheddar cheese
Preparation
    Peel and dice eggplant.
    Cook until tender.
    Set aside.
    Cook hamburger and onion.
    Drain grease.
    In a large bowl mix stuffing mix, egg and mushroom soup.
    Then add hamburger and eggplant.
    Use enough of the egg plant water to mix well.
    Place half of mixture in a 9 x 13-inch pan.
    Put half of cheese over mixture.
    Layer remaining mixture; top with cheese.
    Bake at 350\u00b0 for 30 to 40 minutes.
