Coconut Cream Pie - cooking recipe
Ingredients

1/2 c. sugar
3 Tbsp. cornstarch
1/4 tsp. salt
1 c. shredded coconut
3 egg yolks
1 c. evaporated milk
1 c. water
1 1/2 tsp. vanilla
1/2 c. coconut
Preparation

Mix thoroughly in a saucepan the sugar, cornstarch, salt, shredded coconut and egg yolks.
Stir in gradually until smooth a mixture of evaporated milk and water.
Cook and stir over low heat until thickened, about 10 minutes.
Remove from heat and stir in vanilla.
Cover and cool thoroughly.
Put in 9-inch baked pastry shell.
Spread with meringue.
Sprinkle with 1/2 cup coconut. Bake 7 to 8 minutes at 400\u00b0.
Cool completely before cutting with wet knife.
