Potato Leek Soup - cooking recipe

Ingredients
    1/2 c. coarsely chopped onions (about 1/2 lb.)
    4 c. sliced leek (white part only, about 2/3 lb.)
    2 medium potatoes, peeled and diced
    3 Tbsp. butter, margarine or oil
    4 c. chicken stock (about 2 cans clear chicken broth)
    salt
    freshly ground white pepper or regular white pepper
    1 c. half and half
Preparation
    Saute onions, leek and potatoes in butter over medium heat for 8 to 10 minutes.
    Add stock and bring to a boil.
    Simmer 20 minutes.
    Puree potato-leek mixture in blender.
    Adjust seasoning with salt and pepper.
    Add half and half.
    Return to heat and heat through.
    Makes 6 servings.
