Bacon And Onion Cornbread - cooking recipe

Ingredients
    1/3 c. chopped onion
    1 Tbsp. butter or margarine
    1 c. yellow cornmeal
    1/2 lb. bacon, cooked crispy and well drained
    1 tsp. salt
    1 tsp. baking soda
    dash of pepper
    2 eggs, well beaten
    2 c. milk or buttermilk
Preparation
    Saute onion in butter until tender, about 5 minutes; set aside. Cook bacon until crispy; drain well.
    In a large bowl, combine cornbread, bacon in bits, salt, baking soda and pepper.
    Add milk to beaten eggs.
    Mix well.
    Gradually add buttermilk mixture and onions to cornbread mixture stirring constantly.
    Pour into a greased 3/4 x 7 x 1 1/2-inch oblong pan.
    Bake in 425\u00b0 oven for 20 minutes.
    Cut and serve.
