Potato Soup - cooking recipe

Ingredients
    1 yellow onion, chopped
    1 Tbsp. olive oil
    1 1/2 c. water
    2 c. cubed potatoes
    1/2 c. sour cream
    1 can cream of chicken soup
    1 3/4 c. milk
    1/2 tsp. salt
    dash of pepper
    8 slices bacon, fried crisp
    sprinkling of shredded Cheddar cheese
    2 thinly sliced spring onions
Preparation
    Saute the onion in a small amount of olive oil.
    Cook the potatoes in 1 1/2 c. of water.
    Add the onions to the potatoes (and water), and cook until potatoes are tender but not falling apart.
    Lower the heat and add sour cream and chicken soup. Gradually add the milk, salt and pepper while stirring constantly. Heat the mixture but do not boil.
