Stir-Fried Chicken And Broccoli - cooking recipe
Ingredients

2 Tbsp. olive oil
2 whole chicken breasts, skinned and cut in 1-inch pieces
2 c. broccoli flowerets
1 medium red bell pepper, cut in 1-inch chunks
1/2 c. sliced onion
1 large clove garlic, minced
1 1/2 c. vegetable juice
1 Tbsp. cornstarch
1 Tbsp. soy sauce
1 tsp. brown sugar
1/2 tsp. grated, fresh ginger
3 c. hot, cooked rice
Preparation

In 10-inch skillet over medium heat in hot oil, cook chicken, a few pieces at a time, until lightly browned.
Remove with slotted spoon.
Add broccoli, pepper, onion and garlic; cook until tender-crisp.
In small bowl, stir together juice, cornstarch, soy sauce, brown sugar and ginger.
Stir into vegetables.
Cook, stirring occasionally, until slightly thickened.
Add reserved chicken pieces and heat through.
Serve over hot, cooked rice.
