Ingredients

4 1/2 lb. firm, medium-size green tomatoes, cored and cut into slices
6 c. sugar
grated rind and juice of 1 lemon
grated rind and juice of 1 orange
Preparation

Layer tomatoes alternately with sugar in a large mixing bowl; sprinkle
with
citrus
rind
and
juice.
Cover and let stand at room temperature 8 hours.
