Evelyn Collins' Dietetic Fruit Cake - cooking recipe
Ingredients

2 c. water
1 c. unsweetened applesauce
2 Tbsp. liquid sweetener
1/2 tsp. nutmeg
3/4 c. cooking oil
2 c. raisins
2 eggs
1 tsp. baking soda
1 1/4 tsp. cinnamon
2 c. all-purpose flour
1 tsp. pure vanilla
2/3 c. chopped pecans
Preparation

Cook raisins in water until water is gone.
Add applesauce, eggs, sweetener and oil.
Mix well.
Add dry ingredients and vanilla.
Pour into loaf pan that has been sprayed with Pam.
Bake at 350\u00b0 for 1 hour.
