Mexican Chicken Manicotti - cooking recipe

8 uncooked manicotti shells
1 1/2 c. cooked chicken or turkey, cut up, or 1 1/2 c. cooked turkey burger
1 c. shredded carrots
1 c. nonfat cottage cheese
2 Tbsp. sliced green onion
2 Tbsp. chopped cilantro
1/2 tsp. garlic powder
1 (10 oz.) can Ro-Tel or 1 c. salsa
1/4 c. shredded Monterey Jack cheese
Preparation

Cook manicotti as directed on package; drain.
Combine chicken, carrots, cottage cheese, onion, cilantro and garlic; stuff manicotti shells with chicken mixture.
Arrange in ungreased 13 x 9 x 2-inch pan.
Pour Ro-Tel over manicotti, then sprinkle with cheese.
Cover with foil and bake 35 minutes or until hot in center in 325\u00b0 oven.
