Winter Warm-Up Beef Simmer - cooking recipe

Ingredients
    1 c. (2 medium) onions
    3 lb. beef chuck roast, cut/trimmed to 2 1/2-inch pieces
    3 medium carrots, cut in 1-inch pieces
    8 oz. pkg. mushrooms, halved
    1 c. apple juice
    6 oz. can tomato paste
    1/2 tsp. pepper
    1 tsp. minced fresh garlic
    6 slices bacon, cut up in 1/2-inch pieces
    8 medium red potatoes, halved
    3 medium onions, halved
    1/2 c. chopped parsley
    10 1/2 oz. can beef broth
    1/2 tsp. salt
    1/2 tsp. thyme leaves
    2 bay leaves
Preparation
    Heat oven to 325\u00b0.
    Place onions, bacon and beef in Dutch oven.
    Cook over medium-high heat, stirring occasionally, until bacon and roast are browned (8 to 10 minutes).
    Stir in vegetables.
    Stir in remaining ingredients.
    Cover and bake for 1 1/2 hours.
    Uncover; continue baking (stir occasionally) for
    2 to 2 1/2 hours or until beef is fork-tender.
