Marigold Cake - cooking recipe

Ingredients
    1 c. softened butter
    1 c. Caster sugar
    4 eggs, beaten
    2 c. plain flour
    grated rind of 1 lemon and one orange
    1 tsp. baking powder
    3 Tbsp. fresh marigold petals or 2 tsp. dried
    granulated sugar (optional)
Preparation
    Cream butter with sugar and add eggs, one at a time.
    Sift flour with baking powder and fold into creamed mixture.
    Add grated rinds and marigold petals.
    Spoon into prepared 2-pound loaf pan or 2 (1 pound) loaf pans.
    Bake in preheated 350\u00b0 oven for about 1 hour for 2-pound tin; about 40 minutes for 1-pound. Sprinkle with granulated sugar about halfway through if desired. Cool 5 minutes.
    Remove from tin.
    Serve just when cool.
    Keeps well and can be frozen.
