Christmas Eve Beet Borscht - cooking recipe

Ingredients
    2 1/2 lb. beets, peeled (canned are fine)
    1 onion
    2 qt. cold water
    19 oz. tomato juice
    1 c. sugar
    2 tsp. salt
    fresh dill sprigs
    sour cream to garnish
Preparation
    In a food processor, grate beets and onion.
    Combine with water in a large saucepan.
    Bring to a boil; reduce heat to a simmer.
    Add remaining ingredients.
    Simmer 1 hour.
    Serve hot with a spoonful of sour cream to garnish each soup bowl.
