Gumbo Orleans - cooking recipe

Ingredients
    4 Tbsp. olive oil or salad oil
    1/2 c. chopped onion
    1/2 c. chopped celery
    1/4 c. chopped green pepper
    1 qt. chicken stock
    2 cans tomatoes
    1 can tomato sauce
    1 pkg. frozen sliced okra
    1 lb. cooked, peeled shrimp
    1/2 lb. or 2 cans lump crab meat
    2 tsp. salt
    pinch of pepper
Preparation
    Saute onion, celery and green pepper in hot oil until tender. Add stock, tomatoes, tomato sauce and okra; simmer for 1 1/2 hours.
    Add shrimp, crab meat, salt and pepper.
    Simmer for 30 minutes to 1 hour.
    Serve on top of mounds of hot, boiled rice as main dish along with tossed green salad and hot French bread.
