Banana Nut Bread - cooking recipe
Ingredients

2 1/2 c. sugar
3 c. flour
1 tsp. soda
3/4 tsp. salt
1 1/2 c. mashed bananas
1/2 c. buttermilk
1 tsp. vanilla
1 1/2 c. Wesson oil
3 eggs
Preparation

Mix together well in larger bowl, then add 1 cup chopped pecans and 1 cup coconut (optional); pour into a well-greased tube pan and bake at 350\u00b0 for 1 hour or until toothpick comes out clean.
Cool in pan 15 minutes, then turn out onto wire rack to finish cooling.
This cake freezes well.
(You can make for loaf pan; cook 50 minutes.)
