Crustless Leek And Potato Quiche - cooking recipe

Ingredients
    2 tsp. butter
    3 leeks, quartered lengthwise, sliced crosswise 1/2-inch thick and rinsed well
    1 large potato, cut into 1/2-inch cubes
    1/4 tsp. salt
    1/4 tsp. pepper
    1/3 c. water
    3 large eggs
    1 c. milk
    1/2 c. Ricotta cheese
    3 Tbsp. Parmesan cheese
Preparation
    Preheat the oven to 375\u00b0.
    Lightly grease a 10-inch quiche dish or pie pan.
    Set aside.
    In a 10-inch skillet, melt butter over moderate heat.
    Add leeks, potatoes, salt and pepper.
    Cook for 1 minute.
    Add the water; simmer, covered, for 12 minutes.
