Ingredients

2 c. sugar
2 c. white vinegar
1 tsp. allspice
1 thinly sliced lemon (optional; I do not use!)
2 c. water
1 tsp. cloves
1 Tbsp. cinnamon
Preparation

Cook beets until tender. Dip into cold water.
Peel off skins.
Make the syrup.
Pour the above syrup mixture over the beets and simmer 15 minutes.
Pack into sterilized jars and seal.
