Potato Candies - cooking recipe

Ingredients
    3/4 c. cold unseasoned mashed potatoes
    4 c. confectioners sugar
    4 c. shredded coconut
    1 tsp. vanilla
    1/4 tsp. salt (optional)
    1 c. semi-sweet chocolate chips
Preparation
    Mash potatoes with sugar.
    Work in coconut, vanilla and salt. Press into a shallow baking pan.
    In a microwave-safe bowl, microwave chocolate on High until just melted (about 2 minutes). Stir and pour evenly over potato mixture.
    Cool and cut into squares.
    (Like Mounds Bars.)
