Potato Pancakes - cooking recipe

Ingredients
    3 c. finely shredded peeled potatoes, well drained
    2 eggs, well beaten
    1-1/2 Tbsp. all-purpose flour
    1/8 tsp. baking powder
    1/2 tsp. grated onion
Preparation
    In a mixing bowl, gently combine potatoes and eggs. Combine flour, baking powder and onion; stir into potato mixture. Drop by teaspoonfuls onto a preheated nonstick skillet coated with nonstick cooking spray. Brown lightly on both sides.
