Eggplant - cooking recipe

Ingredients
    1 large eggplant
    1 onion, diced
    1 can Ro-Tel tomatoes with diced green chilies
    salt
    3 c. water
Preparation
    Put water, salt, onion and eggplant in pressure cooker for 5 minutes of pressure.
    Remove all ingredients from cooker and transfer to another pan or wok.
    Cook in wok until water is dissolved.
    While dissolving, add Ro-Tel tomatoes and salt to taste.
    Add red pepper if needed, but tomatoes are quite spicy!
