Lemon Meringue Pie - cooking recipe

Ingredients
    1/4 c. cornstarch
    1 c. sugar
    1/4 c. lemon juice
    3 egg yolks
    1 1/2 c. water
    1 tsp. grated lemon rind
    1 tsp. margarine
    1 (9-inch) regular prepared pie crust, baked
Preparation
    In medium saucepan, combine cornstarch, sugar and lemon juice. Mix well. Beat egg yolks. Add to cornstarch mixture.
    Add water. Bring mixture just to boiling point over medium heat and simmer for 5 minutes, stirring constantly. Remove from heat.
    Add margarine and grated lemon rind to thickened mixture.
    Stir until well blended.
    Pour in baked pie crust.
    Prepare egg white meringue.
    Beat 3 egg whites and 6 tablespoons sugar. Spread on pie and bake 8 minutes until brown.
