Spinach And Mushroom Soup(Easy; Serves 4 To 6) - cooking recipe
Ingredients

1 onion, chopped
1/4 c. butter (1/2 stick)
2 Tbsp. chopped parsley
4 Tbsp. chopped chives
1 (10 oz.) pkg. frozen chopped spinach, thawed
1/2 lb. mushrooms, thinly sliced
pinch of thyme
2 (10 1/2 oz.) cans chicken broth or your own
1 c. half and half
salt and pepper to taste
Preparation

In a saucepan over medium-high heat and uncovered, saute together onion and mushrooms in butter until onion is soft. Add thyme, parsley, chicken broth and chives. Stir to combine. Add spinach and cook for 5 minutes. Add cream and seasonings and heat through. Serve hot with a spoon of sour cream on top and a sprinkling of chives. If you don't have chives, the green part of green onions is fine. Can be prepared earlier and refrigerated. Reheat over low heat, stirring. Can be doubled or tripled.
