Red Beans And Rice With Beef Sausage - cooking recipe

Ingredients
    3 to 4 sliced beef sausages
    2 lb. dry red beans, sorted and rinsed
    4 qt. water (add more if needed)
    3 c. diced, smoked turkey
    1 c. each: diced onions, celery and green pepper
    6 cloves minced garlic
    3 Tbsp. Creole or Cajun seasoning (add more or less, depending on your preference)
    1 bay leaf
    1 c. red wine
    4 diced and peeled plum tomatoes
Preparation
    Sort and wash beans.
    Add water, bring to a boil and immediately turn off stove.
    Let beans sit for 1 hour.
    Do not lift lid.
    Pour off water and replace with fresh hot water.
    Add all ingredients and simmer approximately 2 hours or until beans are tender and broth is fairly thick.
    Serve over cooked rice.
