Zucchini Bread - cooking recipe
Ingredients

2 c. shredded or grated zucchini
2 c. sugar
1 c. cooking oil
3 eggs
1 tsp. vanilla
1 c. chopped nuts (optional)
1/2 c. raisins (optional)
3 c. flour
1/4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. each: cinnamon, ginger and ground cloves
Preparation

Preheat oven to 325\u00b0.
Combine zucchini, sugar, oil, eggs and vanilla. Mix well.
(I do this in the blender.)
Sift together flour, baking powder, baking soda, salt and spices.
Add to liquid mixture.
Mix well.
Add chopped nuts and raisins.
Grease and flour 2 loaf pans.
Bake for 1 hour.
Cool for 20 minutes.
Remove from pans.
