Secret Pumpkin Soup - cooking recipe
Ingredients

1 large onion, chopped
1 lb. mushrooms, sliced
1 stick (1/4 lb.) butter
1/3 c. flour
2 qt. chicken broth
2 c. canned pumpkin (plain, not pie filling)
2 c. light cream
3 Tbsp. honey
2 tsp. nutmeg, salt and white pepper
Preparation

Saute onion and mushrooms in butter for 1 to 2 minutes. Remove from heat.
Stir in flour.
Add chicken broth and pumpkin. Bring to boiling.
Reduce heat and simmer for 20 minutes.
Add light cream, honey, nutmeg, salt and pepper to taste.
Heat through and serve.
Serve in small, hollowed out pumpkins for an added touch.
Sprinkle top with a little nutmeg and top with a small sprig of parsley or fresh chives.
