1/4 c. sun-dried tomatoes
1/2 c. boiling water
6 oz. boneless, skinless chicken breast
1/4 c. dry white wine
1 Tbsp. Italian seasoning
3 Tbsp. chopped shallots
1 1/4 c. chopped fresh portabello mushrooms (2 smallish mushrooms)
1/2 c. fresh or frozen peas, thawed
8 oz. dried penne pasta
vegetable oil cooking spray
5 garlic cloves, peeled and minced
1 Tbsp. all-purpose flour
12 oz. evaporated skim milk
1/8 tsp. ground nutmeg
1/2 tsp. crushed red pepper flakes
1/2 c. chopped fresh basil
5 black olives, thinly sliced
Preparation

Preheat oven to 350\u00b0.
Put sun-dried tomatoes in a bowl.
Add boiling water and let soak until you're ready to use.
