Mexican Rice - cooking recipe

Ingredients
    1 c. long grain rice
    3 Tbsp. oil
    1/2 small onion, chopped
    1 clove garlic, minced
    1 small tomato or 3 oz. tomato sauce
    1/4 c. fresh or frozen peas and carrots (optional)
    2 c. boiling chicken broth
    1 tsp. salt
Preparation
    Saute the rice in hot oil until golden brown.
    Add onion, garlic and vegetables.
    Cook slightly.
    Add boiling stock, salt and tomato sauce.
    Return to a boil, then lower heat, cover and cook on low heat for about 25 minutes or until rice is tender and the liquid has absorbed.
