Zesty Black-Eyed Peas - cooking recipe

Ingredients
    2 (16 oz.) cans black-eyed peas, rinsed and drained
    1 c. chopped celery
    1 green pepper, chopped
    1 large tomato, peeled and chopped
    2 green onions, sliced
    1 garlic clove, minced
    1 (4 oz.) jar sliced mushrooms, drained
    1 (4 oz.) jar diced pimiento, drained
    1 (8 oz.) bottle Italian salad dressing
    lettuce leaves
    3 slices bacon, cooked, drained and crumbled
    3 green onions, thinly sliced
Preparation
    Combine first 9 ingredients in a large bowl, tossing gently. Cover and chill at least 8 hours, stirring occasionally.
    Drain mixture and spoon into a lettuce-lined bowl.
    Garnish with bacon and onions.
    Serves 8.
