Cream Caramels(Christmas Favorite) - cooking recipe
Ingredients

2 c. granulated sugar
few grains salt
2 c. light corn syrup
1/2 c. butter (1 stick)
2 c. evaporated milk
1 tsp. vanilla
Preparation

Use a heavy iron, aluminum or copper kettle for cooking.
Boil sugar, salt and syrup, stirring occasionally, to 245\u00b0.
Add butter and milk gradually so that mixture does not stop boiling at any time.
Cook rapidly to firm ball stage (242\u00b0).
Stir constantly as mixture becomes very thick and sticks easily at the last.
Remove from heat.
Add vanilla and pour into a well-buttered 8 x 10-inch pan.
Cool thoroughly.
Turn onto a buttered board.
Cut with a heavy, sharp knife using a saw-like motion.
After they are cut, wrap each piece in a square of wax paper.
Yields 2 pounds.
