Cheesy Hominy Casserole - cooking recipe

Ingredients
    1 stick butter or margarine
    1 small onion, chopped
    1 small bell pepper, chopped
    1 can cream of mushroom soup
    1 can Ro-Tel tomatoes and chilies
    2 cans white hominy, drained
    1 Tbsp. chili powder
    1/2 c. Velveeta cheese, cubed
    Cheddar cheese, grated (enough to cover top of dish)
Preparation
    In a large pan, saute butter, onion and bell pepper.
    Add soup, tomatoes, hominy and chili powder.
    Mix together until well blended.
    Pour into a large casserole.
    Add Velveeta cheese; stir. Top with grated Cheddar cheese.
    Bake at 350\u00b0 for 25 minutes or until bubbly throughout.
