Scalloped Eggplant(Like A Casserole; Awesome!) - cooking recipe

Ingredients
    1 large eggplant, peeled and cubed
    1 can cream mushroom soup
    1/3 c. milk
    1 egg, slightly beaten
    1/3 c. minced onion
    1/3 c. grated Parmesan cheese
    1/3 c. melted butter
    1 1/4 c. dry seasoned bread cubes
Preparation
    Cook cubed eggplant in salted boiling water 15 minutes.
    Drain. Add soup and milk.
    Stir well.
    Add egg, onion and 1 cup bread cubes.
    Blend thoroughly.
    Pour into buttered casserole dish.
    Top with remaining bread cubes combined with melted butter.
    Sprinkle with grated cheese.
    Bake until bubbly, approximately 45 minutes.
