Yellow Rice Casserole(Serves 6) - cooking recipe

Ingredients
    1 (5 oz.) pkg. yellow rice
    1 (12 oz.) can Mexicorn, drained
    1 medium onion, chopped
    1 (8 oz.) can tiny English peas, drained
    1 (2 oz.) jar pimentos (optional)
    1 (10 1/2 oz.) can undiluted cream of chicken soup
    1 (8 oz.) carton sour cream
    1/2 stick margarine, melted
    1 c. grated Cheddar cheese
Preparation
    Cook yellow rice according to directions on package.
    Blend soup, sour cream and melted margarine.
    Combine all ingredients except grated cheese.
    Pour into 7 x 11-inch baking dish (10-inch Corning dish is perfect).
    Cook for 25 minutes at 350\u00b0.
    Top with cheese and return to oven for 5 more minutes.
    This is different and delicious!!!!
