Pumpkin Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1/2 tsp. nutmeg
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
Preparation

Mix eggs alone for 1 minute.
Slowly add sugar; beat on low for 4 minutes.
Add pumpkin; scrape bowl well.
Combine all dry ingredients and add to pumpkin mixture, mix for 1 minute.
Line jelly roll pan (cookie sheet) with waxed paper and grease the paper generously.
Pour mix into pan and bake 12 to 15 minutes at 375\u00b0. Turn cake onto towel that has been sprinkled with confectioners sugar; remove wax paper.
Roll cake and towel up together.
Cool completely.
