Texas Pecan Cake - cooking recipe
Ingredients

7 eggs, separated
3 c. sugar
1 lb. margarine
1 lb. candied cherries
1 lb. candied pineapple
5 c. all-purpose flour
1 qt. pecans
2 oz. bottle pure lemon extract
2 tsp. vanilla
4 tsp. warm water
1 tsp. soda
Preparation

Beat margarine and sugar.
Add slightly beaten egg yolks.
Add pecans and fruit with part of flour.
Add soda to warm water. Beat into mixture of margarine and sugar.
Add lemon extract. Add fruit and flour mixture.
Beat egg whites.
Mix in egg whites, alternating with rest of flour.
Bake at 350\u00b0 for 1 1/2 hours.
