Ingredients

3 c. moist shredded coconut (8 oz.)
1 tsp. vanilla or almond extract
1/8 tsp. salt
2/3 c. sweetened condensed milk
1 or 2 stiffly beaten egg whites
chocolate
confectioners sugar
Preparation

Preheat oven to 350\u00b0.
Have the coconut ready in a bowl.
Add the vanilla or almond extract and salt.
Combine these with the sweetened condensed milk.
Make a thick paste.
These are much improved by folding into the batter the stiffly beaten egg whites. Roll into balls, or drop by teaspoon onto a well-greased cookie sheet.
Bake for 8 to 10 minutes, until lightly browned around edges.
