Roulade Of Beef Fenelon - cooking recipe

Ingredients
    2 lb. flank steak
    1/2 lb. sausage meat
    1 small onion, chopped
    2 c. bread crumbs
    1/3 c. hot water
    1 tsp. salt
    1/2 tsp. pepper
Preparation
    Flatten steak by pounding.
    Brown sausage and onion in frying pan.
    Reserve 2 tablespoons fat for browning the steak.
    Add bread crumbs to sausage and brown slightly.
    Add water and mix.
    Spread seasonings and sausage mixture over the surface of the flattened steak; then roll up and fasten with toothpicks or string.
    Brown the steak roll on all sides in iron skillet in the 2 tablespoons reserved fat and bake in moderate oven until tender, about 2 hours.
