Fried Spinach Stuffed Chicken Breast - cooking recipe

1 (10-oz.) frozen chopped spinach, thawed, drained
1/4 c. sour cream
1/2 tsp. salt
1/4 tsp. ground nutmeg (optional)
1/8 tsp. pepper
1 c. all-purpose flour
1 tsp. salt
2 tsp. pepper
1 Tbsp. poultry seasoning
1/4 tsp. garlic powder
6 chicken breasts, skinless, boneless
1 egg
1/2 c. milk
Preparation

Place breast between heavy plastic wrap and flatten to 1/4-inch thickness.
Place 1/2 teaspoon of spinach mixture on each flattened breast.
Fold in sides and ends and secure with toothpicks. Combine egg and milk, mix well.
Dredge chicken in flour mixture, then dip in egg mixture, and dredge in flour mixture.
Pour oil to 1 inch in skillet and fry chicken in hot oil about 15 minutes or until golden brown.
May also dip in egg wash and roll in cornflake crumbs (with seasonings) and bake.
