Mom'S Meat Loaf And Roasted Veggies - cooking recipe

Ingredients
    1 garlic clove
    2 lb. ground beef
    2 well-beaten eggs
    1/2 c. breadcrumbs
    1/2 c. milk
    2 Tbsp. parsley flakes
    1/2 tsp. pepper
    2 tsp. salt
    2 Tbsp. chopped onion
    3 carrots, cut into chunks
    6 potatoes, cut into chunks
Preparation
    Rub bowl with garlic.
    In same bowl, mix beef, eggs, breadcrumbs, milk, parsley, pepper, salt and onion.
    Form into a loaf and place in greased roasting pan.
    Place carrots and potatoes around meat loaf in pan.
    Cover with foil and bake at 375 degrees for 1 hour.
    Uncover and bake another 30 minutes.
