Gumbo New Orleans Style - cooking recipe

Ingredients
    3/4 c. cooking oil
    3 large onions
    8 cloves garlic
    1 large can tomatoes
    3 Tbsp. Kitchen Bouquet
    6 basil leaves
    5 Tbsp. flour (to make roux)
    5 lb. peeled raw shrimp
    1 doz. crabs
    5 lb. diced okra
    salt and pepper to taste
Preparation
    Make a roux (brown flour in cooking oil).
    Saute onions.
    Add all ingredients except shrimp; bring to a boil.
    Reduce heat; simmer 1 hour.
    Add shrimp; simmer 1/2 hour.
    Serve over rice; top with file gumbo.
