Quick Turkey Hash - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    1 c. sliced mushrooms
    1/2 c. finely chopped onion
    2 c. diced, cooked turkey
    2 c. diced, cooked potatoes
    1 Tbsp. snipped parsley
    1 tsp. salt
    1/8 tsp. black pepper
    2/3 c. undiluted skim evaporated milk
Preparation
    Heat oil in a large saucepan on medium heat. Add mushrooms and onion. Saute about 5 minutes.
    Remove from heat. Stir in turkey, potatoes, parsley, salt and pepper.
    Stir in evaporated milk. Reduce heat to low.
    Heat mixture thoroughly (about 5 minutes). Makes 6 servings.
