Squash Casserole - cooking recipe

Ingredients
    5 large squash
    1 can cream of mushroom soup (may use cream of chicken)
    1 c. grated American cheese
    1 c. crushed Ritz crackers
    1 large egg
    1 large onion
Preparation
    Dice squash and onion in a saucepan and boil until tender. Drain excess water and mash squash and onion mixture.
    In a large mixing bowl, mix mushroom soup, 1/2 cup grated cheese, 1/2 cup Ritz crackers, egg and squash and onion mixture.
    Pour mixture into a casserole dish.
    Top with remaining cheese.
    Top cheese with remaining Ritz crackers.
    Bake at 325\u00b0 for 35 to 40 minutes.
