Pepper Muffins - cooking recipe
Ingredients

1/2 c. butter
1/3 c. green onion, chopped
1/3 c. red bell pepper, finely chopped
1/2 c. green bell pepper, finely chopped
2/3 c. sour cream
2 eggs, room temperature
1 1/2 c. flour
2 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
Preparation

Preheat oven to 400\u00b0.
Grease muffin cups.
Melt butter in skillet with onion and peppers; cook until tender about 7 minutes, stirring often.
Cool to lukewarm.
Whisk sour cream and eggs in medium bowl.
Stir in cooled onion mixture.
Combine flour, sugar, baking powder, salt, soda in large bowl.
Make well in center.
Add sour cream mixture, stirring just until blended.
Fill muffin cups 3/4 full.
Bake at 400\u00b0 for 20 to 25 minutes.
Makes 10 muffins. This is a great smelling complement to hearty soups.
