Jewel Slay'S Scalloped Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    1 egg, beaten
    1/2 c. milk
    3 Tbsp. melted butter
    1 small chopped onion
    1 1/4 c. grated cheese
    1/4 tsp. garlic powder
    1 c. bread crumbs
    1/2 c. buttered cracker crumbs
Preparation
    Pare eggplant.
    Slice and boil in salted water until tender; drain.
    Add egg, butter, onion, cheese, garlic powder, milk and bread crumbs.
    Place in buttered 1-quart baking dish.
    Top with cracker crumbs.
    Bake at 350\u00b0 for 30 minutes.
