Lentil Soup - cooking recipe

Ingredients
    1 lb. lentils
    5 qt. water
    2 cloves garlic, chopped
    4 large onions, chopped
    3 celery stalks, chopped
    1/4 c. vegetable oil
    4 to 6 potatoes, peeled and diced
    4 carrots, sliced
    1 1/2 c. tomatoes, diced
    1 bag fresh spinach *
    1/2 tsp. black pepper
    1 tsp. chopped parsley
    salt to taste
    3 Tbsp. butter
Preparation
    Wash lentils and soak in water overnight; drain.
    Bring 5 quarts of water to a boil.
    Saute onions, garlic and celery in vegetable oil and add to boiling water.
    Add all other ingredients and bring to a boil again.
    Lower heat; cover and cook 2 1/2 hours.
    Add additional seasonings to taste prior to serving.
