Roast Chicken With Lemon And Garlic - cooking recipe

Ingredients
    1 roasting chicken (about 3 to 4 lb.)
    salt and freshly ground black pepper to taste
    1 tsp. olive oil
    2 lemons
    5 bulbs garlic, divided
    1 bunch fresh thyme, washed, dried and divided
Preparation
    Preheat oven to 450\u00b0 to 500\u00b0.
    Remove chicken parts from cavity of the bird.
    Wash bird inside out.
    Pat dry.
    Rub skin with olive oil.
    With an ice pick, poke about 2 dozen holes in each lemon. Break 1 head of garlic into cloves; peel and remove ends.
    Stuff the cavity of the bird with the 2 lemons, the garlic cloves and half the thyme.
