Nancy Caldwell'S Zucchini Bread - cooking recipe

Ingredients
    2 c. shredded zucchini
    3 eggs, beaten
    2 1/4 c. sugar
    1 c. oil
    1 tsp. vanilla
    3 c. flour
    2 tsp. cinnamon
    1 tsp. salt
    1 tsp. baking soda
    1 c. raisins (optional)
    1 c. nuts (optional)
Preparation
    Combine zucchini and beaten eggs.
    Add remaining ingredients. Bake at 350\u00b0 for 1 hour or at 325\u00b0 for 1 hour and 15 minutes.
    Can be made in loaf pans, an angel food pan or Bundt pan.
    Yields 2 loaves or 3 small.
