Oatmeal Bread - cooking recipe

Ingredients
    1 c. uncooked oatmeal (quick)
    1 c. milk, scalded
    1/2 c. boiling water
    1/2 c. shortening (bacon drippings are good)
    1/2 c. brown sugar, firmly packed
    2 tsp. salt
    2 pkg. dry yeast
    1/2 c. warm water
    5 c. sifted flour
Preparation
    Put oatmeal in large bowl.
    Stir in milk and boiling water. Add shortening, sugar and salt; let stand until lukewarm. Sprinkle yeast into 1/2 cup of warm water.
    Stir until dissolved. Stir into oatmeal mixture.
    Add 1/2 the flour; mix until smooth. Add remaining flour, a little at a time.
    Mix until dough leaves sides of bowl.
    Turn out on board; knead 7 minutes.
    Place dough in greased bowl.
    Cover with damp cloth; let rise 1 1/2 hours. Knead and shape into loaves.
    Bake at 400\u00b0 for 10 minutes.
    Reduce heat to 350\u00b0 and bake for 40 minutes.
    Makes 2 loaves.
