Ingredients

2 eggs
1 c. orange juice
2 Tbsp. honey
1 3/4 c. packaged biscuit mix
1/2 c. ground walnuts
Preparation

In mixer bowl, combine eggs, orange juice and honey; beat with an electric mixer until blended.
Add biscuit mix and nuts; beat on medium about 30 seconds or until well blended.
Pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet. Cook until golden brown, turning when pancake has a bubbly surface and slightly dry edges.
Repeat with remaining batter.
Makes 12 to 14 pancakes.
