Carrot-Peanut Apple Mix - cooking recipe

Ingredients
    4 tender carrots
    1/4 c. toasted peanuts, chopped
    1/4 c. raisins
    1 red apple (unpeeled), chopped
    1/4 c. low-fat mayonnaise
Preparation
    Wash and scrape carrots; grate coarsely.
    Add chopped peanuts, raisins and apple.
    Toss with mayonnaise.
    Serve on lettuce leaf.
