Potato Omelet - cooking recipe

Ingredients
    2 lb. potatoes
    1/2 c. olive oil
    1/2 c. red bell pepper, minced
    sweet red bell pepper strips
    salt and pepper to taste
    2 c. sliced onions
    6 eggs
    1/2 Tbsp. butter
Preparation
    Peel potatoes and slice thinly.
    Rinse in cold water and dry. Salt and pepper.
    Saute onion in oil over low heat until lightly browned.
    Add sweet pepper and potatoes about halfway through cooking.
    Drain and save mixture.
    Wipe pan with paper towel.
    Add butter and melt.
