Zucchini Cake - cooking recipe

Ingredients

3 c. grated zucchini and rind
3 c. sugar
1 1/2 c. oil
4 eggs
3 c. flour
2 tsp. baking powder
1 tsp. soda
2 tsp. cinnamon
1/2 tsp. salt
1 c. nuts (optional)

Preparation

Mix zucchini, sugar, oil and eggs.
Combine dry ingredients. Mix well.
Add nuts.
Grease and flour pans.
Bake at 300\u00b0 for 1 1/2 hours.
Makes 3 loaves.
